Ingredients
Scale
For the Dough:
- 3 ½ cups bread flour (or all-purpose flour)
- 2 teaspoons instant yeast
- 1 ½ teaspoons salt
- 2 tablespoons sugar (or honey)
- 1 cup warm water (110°F/43°C)
- 1 tablespoon vegetable oil
- ¾ cup fresh or dried blueberries
For the Boiling Water Bath:
- 6 cups water
- 1 tablespoon honey or brown sugar (for shine and chewiness)
For the Topping (Optional):
- 1 egg yolk + 1 tablespoon water (for egg wash)
- 1 teaspoon coarse sugar (for a slightly sweet crust)
Instructions
1. Prepare the Dough
- In a large mixing bowl, combine flour, yeast, salt, and sugar.
- Add warm water and oil, then mix until a rough dough forms.
- Knead the dough for 8-10 minutes, until smooth and elastic.
- Gently fold in blueberries, ensuring they are evenly distributed.
2. First Rise
- Place the dough in a greased bowl, cover with a towel, and let it rise for 60-90 minutes, until doubled in size.
3. Shape the Bagels
- Punch down the dough and divide it into 8 equal portions.
- Roll each portion into a ball, then poke a hole in the center and stretch it into a bagel shape.
4. Boil the Bagels
- Bring 6 cups of water to a gentle boil, then add honey or brown sugar.
- Drop 2-3 bagels at a time into the boiling water and boil for 30 seconds per side.
- Remove with a slotted spoon and place on a parchment-lined baking sheet.
5. Bake the Bagels
- Preheat the oven to 400°F (200°C).
- Brush each bagel with egg wash and sprinkle with coarse sugar (if using).
- Bake for 18-22 minutes, until golden brown and fluffy.
- Cool on a wire rack before serving.
Notes
- For a sweeter version, increase sugar to 3 tablespoons.
- Fresh blueberries will release moisture; if using them, freeze before mixing into the dough to prevent excess stickiness.
- Store bagels in an airtight container for up to 3 days, or freeze for up to 3 months.
