Description

These Fluffy Blueberry Bagels are soft, chewy, and bursting with juicy blueberries! Made from scratch, they have a light texture with a hint of natural sweetness, making them perfect for breakfast or brunch. These bagels pair wonderfully with cream cheese, honey butter, or jam and can be toasted for an extra-crispy bite.

Ingredients

Scale

For the Dough:

  • 3 ½ cups bread flour (or all-purpose flour)
  • 2 teaspoons instant yeast
  • 1 ½ teaspoons salt
  • 2 tablespoons sugar (or honey)
  • 1 cup warm water (110°F/43°C)
  • 1 tablespoon vegetable oil
  • ¾ cup fresh or dried blueberries

For the Boiling Water Bath:

  • 6 cups water
  • 1 tablespoon honey or brown sugar (for shine and chewiness)

For the Topping (Optional):

  • 1 egg yolk + 1 tablespoon water (for egg wash)
  • 1 teaspoon coarse sugar (for a slightly sweet crust)

Instructions

1. Prepare the Dough

  1. In a large mixing bowl, combine flour, yeast, salt, and sugar.
  2. Add warm water and oil, then mix until a rough dough forms.
  3. Knead the dough for 8-10 minutes, until smooth and elastic.
  4. Gently fold in blueberries, ensuring they are evenly distributed.

2. First Rise

  1. Place the dough in a greased bowl, cover with a towel, and let it rise for 60-90 minutes, until doubled in size.

3. Shape the Bagels

  1. Punch down the dough and divide it into 8 equal portions.
  2. Roll each portion into a ball, then poke a hole in the center and stretch it into a bagel shape.

4. Boil the Bagels

  1. Bring 6 cups of water to a gentle boil, then add honey or brown sugar.
  2. Drop 2-3 bagels at a time into the boiling water and boil for 30 seconds per side.
  3. Remove with a slotted spoon and place on a parchment-lined baking sheet.

5. Bake the Bagels

  1. Preheat the oven to 400°F (200°C).
  2. Brush each bagel with egg wash and sprinkle with coarse sugar (if using).
  3. Bake for 18-22 minutes, until golden brown and fluffy.
  4. Cool on a wire rack before serving.

Notes

  • For a sweeter version, increase sugar to 3 tablespoons.
  • Fresh blueberries will release moisture; if using them, freeze before mixing into the dough to prevent excess stickiness.
  • Store bagels in an airtight container for up to 3 days, or freeze for up to 3 months.
