Ingredients

Scale

For the Cookie Layer:

  • ½ cup unsalted butter, melted
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 ¼ cups all-purpose flour
  • ½ tsp baking soda
  • ½ tsp salt
  • ¾ cup chocolate chips

For the Oreo Layer:

  • 16 Oreo cookies (or enough to cover the pan)

For the Brownie Layer:

  • ½ cup unsalted butter
  • 1 cup semi-sweet chocolate chips
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¾ cup all-purpose flour
  • ¼ cup unsweetened cocoa powder
  • ½ tsp salt

Instructions

  1. Preheat Oven & Prepare Pan:

    • Preheat oven to 350°F (175°C).
    • Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. Make the Cookie Dough Layer:

    • In a bowl, whisk together melted butter, granulated sugar, and brown sugar until smooth.
    • Add egg and vanilla extract, mixing until combined.
    • Stir in flour, baking soda, and salt until a soft dough forms.
    • Fold in chocolate chips, then press the cookie dough evenly into the bottom of the pan.
  3. Add the Oreo Layer:

    • Place Oreo cookies in a single layer over the cookie dough, pressing them in slightly.
  4. Prepare the Brownie Batter:

    • Melt butter and chocolate chips together in the microwave in 30-second intervals, stirring until smooth.
    • Whisk in sugars, eggs, and vanilla extract until well combined.
    • Fold in flour, cocoa powder, and salt, mixing just until combined.
  5. Assemble & Bake:

    • Pour the brownie batter over the Oreo layer, spreading it evenly.
    • Bake for 35-40 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  6. Cool & Serve:

    • Let brownies cool in the pan for at least 30 minutes before slicing.
    • For cleaner slices, refrigerate for 1 hour before cutting.

Notes

  • For extra fudgy brownies, slightly underbake them and let them cool completely before slicing.
  • Add a caramel drizzle or peanut butter swirl for extra indulgence!
  • To make these ahead, store them in an airtight container at room temperature for 3 days or refrigerate for up to a week.
  • Want to make them gluten-free? Use gluten-free flour and gluten-free Oreos.
