Instructions
Preheat Oven & Prepare Pan:
- Preheat oven to 350°F (175°C).
- Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
Make the Cookie Dough Layer:
- In a bowl, whisk together melted butter, granulated sugar, and brown sugar until smooth.
- Add egg and vanilla extract, mixing until combined.
- Stir in flour, baking soda, and salt until a soft dough forms.
- Fold in chocolate chips, then press the cookie dough evenly into the bottom of the pan.
Add the Oreo Layer:
- Place Oreo cookies in a single layer over the cookie dough, pressing them in slightly.
Prepare the Brownie Batter:
- Melt butter and chocolate chips together in the microwave in 30-second intervals, stirring until smooth.
- Whisk in sugars, eggs, and vanilla extract until well combined.
- Fold in flour, cocoa powder, and salt, mixing just until combined.
Assemble & Bake:
- Pour the brownie batter over the Oreo layer, spreading it evenly.
- Bake for 35-40 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
Cool & Serve:
- Let brownies cool in the pan for at least 30 minutes before slicing.
- For cleaner slices, refrigerate for 1 hour before cutting.
Notes
- For extra fudgy brownies, slightly underbake them and let them cool completely before slicing.
- Add a caramel drizzle or peanut butter swirl for extra indulgence!
- To make these ahead, store them in an airtight container at room temperature for 3 days or refrigerate for up to a week.
