Ingredients

Scale
  • 2 boneless, skinless chicken breasts, cut into strips
  • 1 zucchini, sliced
  • 1 red bell pepper, sliced
  • 1 small red onion, sliced
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp dried oregano
  • ½ tsp crushed red pepper flakes (optional)
  • ½ lemon, sliced
  • ¼ cup shredded cheese (optional)

Instructions

  • Preheat Fire or Grill: If using a campfire, allow the coals to burn down to a medium heat. If using a grill, preheat to 375°F (190°C).
  • Prepare Foil Packets: Cut two large pieces of aluminum foil. Divide chicken and veggies evenly between the two.
  • Season & Seal: Drizzle with olive oil, sprinkle with all seasonings, and toss to coat. Add lemon slices on top. Fold the foil over the ingredients and seal the edges tightly.
  • Cook Over Fire: Place foil packets on the grill grate or directly on hot coals. Cook for 20–25 minutes, flipping halfway, until chicken is fully cooked.
  • Serve & Enjoy: Carefully open packets, sprinkle with cheese (if using), and serve hot!

Notes

  • Make-Ahead Option: Prepare foil packets at home and keep them refrigerated in a cooler until cooking time.
  • Substitutions: Swap chicken for shrimp or tofu for a vegetarian option.
  • Pairing Idea: Serve with bread rolls or cooked rice for a complete meal.
