Made with buttermilk, eggs, and a hint of vanilla, this dish is light, airy, and perfect for drizzling with maple syrup. Serve it with fresh fruit, powdered sugar, or whipped cream for a delightful morning treat!

Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ cups buttermilk (or whole milk with 1 tablespoon vinegar)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 4 tablespoons melted butter (plus extra for greasing)
  • ½ cup chocolate chips or blueberries (optional)

Toppings (Optional):

  • Powdered sugar
  • Maple syrup
  • Fresh berries
  • Whipped cream

Instructions

1. Preheat & Prepare

  • Preheat oven to 375°F (190°C).
  • Grease a 9×13-inch baking dish with butter or non-stick spray.

2. Mix the Dry Ingredients

  • In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.

3. Mix the Wet Ingredients

  • In another bowl, whisk buttermilk, eggs, vanilla extract, and melted butter until combined.

4. Combine & Assemble

  • Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix.
  • Pour the batter into the prepared baking dish and spread evenly.
  • If using, sprinkle chocolate chips or blueberries on top.

5. Bake & Serve

  • Bake for 20-25 minutes, or until the center is set and the top is golden brown.
  • Let cool for 5 minutes, then slice and serve with maple syrup, powdered sugar, or fresh berries.

Notes

  • For a richer flavor, add ½ teaspoon cinnamon or a dash of nutmeg.
  • Make it dairy-free: Use almond milk + 1 tablespoon vinegar instead of buttermilk and coconut oil instead of butter.
  • Storage: Store leftovers in an airtight container for up to 4 days, or freeze for up to 3 months.
